September Meals - Clarissa 2

Chicken Ranch Tacos:
2-3 chicken breasts
1 pkt. taco seasoning
1 pkt. Ranch seasoning
------------------
taco shells
lettuce
cheese
sour cream
tomatoes
etc...

Put chicken and seasoning packets in crock pot, add a little water if needed. Cook on low for 5-7 hours.


Serve in taco shells with all the fixings you love -

September Meals - Clarissa

Turkey Parmesan Meatloaf
INGREDIENTS:
1 lb. ground turkey
1/ C. bread crumbs
1/2 tsp. dried Italian seasoning
1-2 cloves garlic - finely minced
1/2 tsp salt
1/4 C. grated Parmesan cheese
1/2 c. shredded Italian cheese blend
1 egg
1/2 tsp. dried parsley
1/2 small onion - grated
1/2 tsp dried oregano
1/4 tsp ground black pepper
1/2 C. pasta sauce

Preheat oven 350 degrees. Lightly grease a loaf pan with cooking spray, set aside. In large bowl, combine turkey, egg, breadcrumbs, parsley, oregano, Italian seasoning, garlic, onion, salt, pepper and Parmesan cheese. Do not over handle the mixture or it will get tough. Place mixture in greased loaf pan and form into loaf. Top the meatloaf with pasta sauce. Bake 40 - 45 minutes.

*When frozen, bake uncovered for 55 - 60 minutes on a baking sheet. Remove the meatloaf from the oven and sprinkle the top with remaining cheese. Place the meatloaf back in the oven and bake until cheese is melted. Remove the meatloaf from the oven and allow to rest 5 - 10 minutes before serving.

Black Bean Taco Soup
1 lb ground beef
1 medium onion, chopped
1 package mild taco seasoning mix (taco bell brand)
1 16 oz can corn (undrained)
1 16 oz can black beans, drained and rinsed (you could use kidney beans or pinto beans)
1 14 oz can stewed tomatoes
1 14 oz can diced tomatoes
1 8 oz can tomato sauce
1 4 oz can diced green chilis
tortilla chips
Other taco toppings you like (cheese, sour cream, avocado, etc)

Brown meat and onion, drain.
Stir in taco seasoning, corn, black beans, tomatoes, tomato sauce, and green chilis. Simmer on low heat for 20 to 30 minutes.
Serve with tortilla chips and your favorite toppings.

This makes an easy freezer meal too! After cooking, let soup cool down and then dump into a gallon-sized Ziploc bag or other freezer container. When you want to eat it, let it thaw in the fridge for 24 hours and then simmer on the stove until heated all the way through or microwave until heated all the way through. You could also put it in your crock pot and cook on low for 2-3 hours to re-heat it.

Honey Lime Chicken Enchiladas Recipe:

Ingredients:
Marinade:
6 tablespoons honey
5 tablespoons lime juice
1 tablespoon chili powder
1/2 teaspoon garlic powder

Enchiladas:
1 pound chicken, cooked and shredded
 
8-10 flour tortillas
1 pound Monterrey jack cheese, shredded
16 ounces green enchilada sauce
1 cup heavy cream

Directions:

Whisk the first four ingredients and toss with shredded chicken in a Zip-loc bag. Let it marinate in the fridge for at least a 1/2 hour, but preferably a half day or so. Pour about 1/2 cup enchilada sauce on the bottom of a 9X13 baking pan. Fill the tortillas with chicken, saving marinade, and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas. Put rolled tortillas in 9x13 pan as you go. Mix the remaining enchilada sauce with the cream and leftover marinade (if there is any). Pour sauce on top of the enchiladas. Sprinkle with remaining cheese. Bake at 350 degrees for 30 minutes until brown and crispy on top.

Scalloped Red Potatoes and Ham

12 Red or New Potatoes - sliced thin

1 large or 2 medium Ham Steaks - cut into cubes

8 oz. shredded cheddar cheese

2 cans Cream of Potato Soup

2 cans water

3 C. broccoli florets

Pepper to taste

Put soup, water and pepper in crock pot and mix together. Add ham cubes, sliced potatoes, broccoli and cheese and stir together. Cook on high 4 hours or low 6 hours.

Company Chicken Casserole

Ingredients:
4 boneless, skinless chicken breasts
1 C. chicken broth
2 cloves garlic
2 wedges onion
4 C. Pepperidge Farm Herb seasoned stuffing mix
1 cube butter (1/2 cup)
1 can Cream of Chicken soup
1 pint sour cream
8 oz. frozen broccoli cuts - thawed (optional)
 
Place chicken breasts, broth, garlic and onion in skillet and bring to boil over medium heat. Turn heat to medium, cover and simmer until pink is gone. About 15 - 20 minutes.

Remove chicken, shred with fork and set aside. Reserve the broth (this should equal 1 cup, if not, add enough canned broth to equal 1 cup.)

Melt the butter and pour over stuffing mix in a bowl. Whisk with fork to blend.

Spread half of the stuffing/butter mixture in a large casserole dish or glass 9x13 dish.

Blend the soup, sour cream and reserved broth together with wire whisk.

Place shredded chicken over stuffing mix. If using broccoli, spread this over the chicken.

Pour the soup mixture over the chicken and top with remaining half of stuffing mixture.

Bake for 30 minutes at 350 degrees. Serve and Enjoy!

CAFE RIO TORTILLA SOUP

INGREDIENTS:
1 onion, diced
1 Tbsp. vegetable oil
1/2 tsp cumin
1/2 tsp. chili powder
4 c. chicken broth
3 Tbsp. fresh cilantro - finely chopped
juice of 1/2 lime
pepper, to taste
1 can pinto beans - drained and rinsed
2-3 boneless skinless chicken breasts
2 Tbsp. taco seasoning
1 Tbsp. paprika
vegetable oil (to taste)
avocado - diced
2 c. cheese - shredded
tortilla strips
cilantro (for garnish)
lime wedges (for garnish)

Instructions:
In a small skillet, saute onion in 1 Tbsp. oil until onions become slightly soft. Stir in cumin, and chili powder and saute an additional minute or two.
Transfer seasoned onions to a small crock pot (or medium-sized saucepan). Add chicken broth, cilantro, lime juice, pepper and pinto beans to onions and simmer on low-heat for at least 2-3 hours.
In the meantime (when you are close to serving), combine taco seasoning and paprika. Brush chicken with oil and rub with taco seasoning/paprika mixture. Grill chicken over medium-heat until cooked through (try to turn only once during the grilling process). Remove from grill and shred. Can add chicken directly to crock pot without grilling.
In individual bowls layer chicken, diced avocado, and cheese. Ladle about 1 cup of chicken broth directly over the layers. Top with tortilla strips and garnish with cilantro and lime wedges.
Freezer Instructions:
Place all ingredients in freezer safe container except garnish. Freeze flat. Once thawed add to crock pot and cook 4 - 6 hours low. If you cook the meal and then freeze it, thaw and then heat to serve.
